To celebrate the grilling time of summer, cook up these delicious chicken skewers seasoned with sweet teriyaki and tangy pineapple flavors.

“Once the weather gets warm, isn’t everyone looking for quick and easy meals?” declared Shawn Gavin, CEO and the founder of Slofoodgroup in Sarasota, Florida.

“That’s why we came up with these grilled teriyaki chicken and pineapple skewers. They’re easy to assemble and cook, and they pack a ton of flavor,” he adds, noting that if you want to save time cooking, use a teriyaki sauce that is already available rather than making it yourself. “Though the skewers are enough for a full meal, we suggest pairing them with pita bread or rice,” he says.

Grilled Teriyaki Chicken Pineapple Skewers by Shawn Gavin of Slofoodgroup

Serves four skewers

Prep time 15 minutes

Cooking time 15 minutes

 

Ingredients:

To use the Skewers:

400 grams of chicken thighs

One teaspoon of sea salt

Freshly cracked one teaspoon of black pepper

Half tiny pineapple was removed, cored, and then cut into pieces

One green pepper, trimmed, then cut into squares

four spring onions trimming and cut into 3-inch sections

for the Teriyaki sauce

Four teaspoons of brown light sugar

Three tablespoons of apple cider vinegar

1-star anise

1/2 cup soy sauce

1/4 cup of water

One teaspoon cornstarch

One tablespoon of fish sauce

Directions:

1. Slice the chicken legs into cubes and sprinkle them with sea salt and black pepper. Cover them with a lid and let them sit in the refrigerator for 30 minutes.

2. whisk together the Apple cider vinegar, Star anise, soy sauce, fish sauce, and cornstarch in a pot. Bring to a simmer for two to three minutes or until the mixture thickens. Remove from the heat and place aside.

3. Make skewers by rotating pieces of meat, green bell pepper, spring onions, pineapple and.

4. The grill to medium-high temperature, then cook skewers for four minutes on each side. Brush with teriyaki sauce and cook for about 1 to 2 minutes.

5. Serve warm.
