The potato is the star of fall and winter. As we prepare sweet potatoes and russet potatoes for Thanksgiving, one question lingers in the minds of potato lovers: Is it safe to eat potatoes that are a bit odd?

If you’ve ever had potatoes on your kitchen counter or pantry, you will know what we are talking about. The potato has a greenish color and small buds called eyes. These were the inspiration for the Mr. Potato Head toy. In 2023, “ugly” produce will still be acceptable to eat. This will eliminate food waste. We asked registered dietitians, food safety experts, and other professionals what it meant when potatoes sprouted eyes and turned green. What they said, and why eating potatoes in general is still a great idea

The truth behind potatoes with eyes.

First, the good news. It is safe to eat potatoes as long as the sprouting does not get out of control.

It can cause serious symptoms if consumed in large quantities. You can eat the potato if it is not soft or shriveled and the sprouts are not large.

How about green potatoes?

Shumaker confirmed that. She stated that green spots in potatoes are indicative of the presence of solanine, which can also be found in sprouts. You can remove small green areas from a potato. However, if they are large, it is best to throw them out.

Shumaker says the eyes on the potato and the greenish tint are the two most common signs that it is bad. It’s best to toss a potato if it looks soft or shriveled. Are you still not convinced? Even though most of the solanine found in bad potatoes is gastrointestinal (gastrointestinal), it can cause paralysis.
