Sweet Potato Boats


  Two Servings:-  

  • 4 sweet potato
  • Two cups of broccoli
  • salt As required
  • Red chilli powder, 2 teaspoons
  • 1 cup cottage cheese
  • Extra virgin olive oil, 2 tablespoons
  • black pepper As required
  • 4 handful coriander leaves

Step 1 Soak sweet potatoes

  • For this sweet potato boat recipe, soak the sweet potatoes for a few minutes in lukewarm or cold water.

Step 2: Make a cavity

  • Then, using a teaspoon, scoop out the sweet potatoes to create a cavity. Add the cottage cheese crumbles, broccoli blanched, and chickpeas to a bowl with sweet potato extracts. Mix well.

Step 3: Bake and Enjoy

  • Add the chopped coriander, pepper, red chilies, and 1 tablespoon olive oil. Mix it well. Place the mixture into the cavity, and air fry/bake at 180 degrees celsius for 20-25 minutes.
